- 2 large potatoes, diced (Russet or Yukon Gold work well)

- 2 cups of kale, chopped
- Salt and pepper to taste
- Crushed red pepper flakes (optional, for heat)
Instructions
- Heat a large pot over medium heat and cook the Italian sausage until browned, breaking it up as it cooks.
- Add the chopped onion and minced garlic, sautéing for 3-4 minutes.
- Pour in the chicken broth and add the diced potatoes; bring to a boil and then let simmer.
- Once potatoes are tender, stir in the heavy cream and chopped kale, cooking for an additional 5 minutes.
- Taste and season with salt, pepper, and crushed red pepper flakes before serving hot.

- For a spicier soup, use spicy Italian sausage.
