A delicious and creamy Zucchini and Rice Gratin, perfect as a side dish or a main course.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup milk
  • 1/2 cup cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and slice the zucchinis.
  3. In a bowl, mix cooked rice, cheese, milk, cream, garlic powder, onion powder, salt, and pepper.
  4. In a greased baking dish, layer zucchini slices and the creamy rice mixture, finishing with cheese on top.
  5. Bake for about 30 minutes until golden brown and bubbly.

Notes

  • Thinner zucchini slices will cook faster.
