- 2 large red bell peppers
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C) and roast red bell peppers for 20 minutes until charred.
- While peppers roast, heat olive oil in a skillet, sauté onion until translucent, then add garlic, smoked paprika, and oregano.
- After roasting, cool, peel, and blend peppers into a smooth puree.
- Add the roasted pepper puree to the skillet mixture, season, and simmer for 5 minutes.
- In a separate pan, cook seasoned tilapia fillets for 3-4 minutes on each side until golden.
- Serve tilapia with the roasted pepper sauce and garnish with parsley.
