Ingredients

  • 4 tilapia fillets
  • 2 large red bell peppers
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and roast red bell peppers for 20 minutes until charred.
  2. While peppers roast, heat olive oil in a skillet, sauté onion until translucent, then add garlic, smoked paprika, and oregano.
  3. After roasting, cool, peel, and blend peppers into a smooth puree.
  4. Add the roasted pepper puree to the skillet mixture, season, and simmer for 5 minutes.
  5. In a separate pan, cook seasoned tilapia fillets for 3-4 minutes on each side until golden.
  6. Serve tilapia with the roasted pepper sauce and garnish with parsley.
