- 2 cups cooked rice (white or brown)
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup teriyaki sauce
- 1 cup broccoli florets
- 1 cup bell peppers, diced
- 1 cup shredded carrots
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 tablespoons sesame seeds (optional)
- Salt and pepper, to taste
- Green onions, chopped for garnish
Instructions
- Preheat the oven to 350°F (175°C) and season the chicken with salt and pepper. Cook in a skillet until golden brown, about 5-7 minutes.
- In a bowl, mix cooked rice, teriyaki sauce, broccoli, bell peppers, and carrots until well coated.
- Add the cooked chicken to the rice mixture and stir well. Transfer to a greased 9×13 inch baking dish.
- Sprinkle cheese on top and bake for 25-30 minutes until cheese is bubbly and golden.
- Let cool for a few minutes, garnish with green onions, and serve hot.
Notes
- Feel free to customize the vegetables based on your preference.
- For added crunch, consider using sesame seeds on top.
