For the best Sweet Hawaiian Crockpot Chicken, you’ll need the following ingredients:

  • 2 pounds of boneless, skinless chicken thighs
  • 1 cup of pineapple chunks (fresh or canned)
  • 1/2 cup of teriyaki sauce
  • 1/4 cup of soy sauce
  • 1/4 cup of brown sugar
  • 1 tablespoon of minced garlic
  • 1 tablespoon of grated ginger
  • 1 bell pepper, sliced (red or yellow for color)
  • 1/4 cup of green onions, chopped (for garnish)

Instructions

  1. Place chicken thighs at the bottom of the crockpot.
  2. In a bowl, mix teriyaki sauce, soy sauce, brown sugar, garlic, and ginger.
  3. Add pineapple chunks and sliced bell pepper on top of the chicken.
  4. Pour the sauce mixture over the chicken and vegetables.
  5. Cover the crockpot and cook on low or high.
  6. Once done, shred the chicken and serve over rice or noodles.
