- 2 eggs, beaten

- Salt and pepper to taste
Instructions
- Prepare cold rice, preferably day-old.
- Heat oil in a skillet, cook shrimp until pink.
- Push shrimp aside, scramble eggs, then mix with shrimp.
- Add mixed vegetables and garlic, stir for 2 minutes.
- Mix in rice and soy sauce until coated.
- Season with salt, pepper, and green onions, heat through, then serve.
