  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare cold rice, preferably day-old.
  2. Heat oil in a skillet, cook shrimp until pink.
  3. Push shrimp aside, scramble eggs, then mix with shrimp.
  4. Add mixed vegetables and garlic, stir for 2 minutes.
  5. Mix in rice and soy sauce until coated.
  6. Season with salt, pepper, and green onions, heat through, then serve.
