Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
- Spread zucchini, bell pepper, and red onion on a sheet pan, drizzle with olive oil, and season.
- Place the seasoned chicken on top of the vegetables.
- Bake for 25-30 minutes until chicken reaches 165°F (75°C).
- Garnish with parsley and serve with lemon wedges.
