Ingredients

  • 1 cup of orzo pasta
  • 2 cups of broccoli florets
  • 1 pound of Italian sausage (mild or spicy, your choice!)
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the orzo according to package instructions (8-10 minutes).
  2. In a skillet, heat olive oil and sauté the Italian sausage until browned (5-7 minutes).
  3. Add minced garlic and broccoli to the skillet, cooking until the broccoli is tender (3-4 minutes).
  4. Drain the orzo and mix it into the skillet with the sausage and broccoli, adding red pepper flakes, salt, pepper, and Parmesan cheese.
  5. Serve hot, garnished with fresh parsley.
