- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the baby potatoes, then cut them in half.
- In a bowl, mix olive oil, minced garlic, salt, black pepper, and Italian herbs. Toss in the potatoes.
- Sprinkle the grated parmesan over the potatoes and stir gently.
- Spread the potatoes on a baking sheet and roast for 30-35 minutes, flipping halfway.
- Garnish with fresh parsley and serve hot.
