Ingredients

  • 4 medium-sized apples (Granny Smith or Honeycrisp work great)
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • 1/2 cup oats
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 cup raisins or cranberries (optional)
  • 1 tablespoon butter
  • Whipped cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the apples by washing, cutting off the tops, and scooping out the cores.
  2. In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, allspice, and salt until smooth. Optionally stir in oats, nuts, and dried fruit.
  3. Stuff each apple with the pumpkin mixture and top with a pat of butter.
  4. Place the apples in a baking dish with a little water, cover with foil, and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until tender.

Notes

  • Serve with whipped cream for an extra treat.
  • Feel free to mix in your favorite nuts or dried fruits for added flavor.
