- 4 medium-sized apples (Granny Smith or Honeycrisp work great)
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon salt
- 1/2 cup oats
- 1/4 cup chopped pecans or walnuts (optional)
- 1/4 cup raisins or cranberries (optional)
- 1 tablespoon butter
- Whipped cream for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C) and prepare the apples by washing, cutting off the tops, and scooping out the cores.
- In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, allspice, and salt until smooth. Optionally stir in oats, nuts, and dried fruit.
- Stuff each apple with the pumpkin mixture and top with a pat of butter.
- Place the apples in a baking dish with a little water, cover with foil, and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until tender.
Notes
- Serve with whipped cream for an extra treat.
- Feel free to mix in your favorite nuts or dried fruits for added flavor.
