  • 2 cups of fresh pineapple, chopped
  • 1 cup of granulated sugar
  • 1 cup of all-purpose flour
  • 1 cup of rolled oats
  • 1 cup of unsweetened coconut flakes
  • 1/2 cup of unsalted butter, melted
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla extract

Instructions

  1. Chop the fresh pineapple into bite-sized pieces.
  2. Preheat the oven to 350°F (175°C).
  3. In a large bowl, mix flour, sugar, oats, coconut flakes, baking powder, and salt.
  4. Add melted butter and vanilla extract, mixing until crumbly.
  5. Layer half of the crumb mixture in a baking dish, add pineapple, and top with remaining crumbs.
  6. Bake for 30 minutes until golden brown and bubbling.
