- 4 bone-in, skin-on chicken thighs
- 1 cup smooth peanut butter
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Combine peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes in a bowl to create the marinade.
- Add chicken thighs to the marinade, coat well, and refrigerate for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- Transfer marinated chicken to a baking dish, pour remaining marinade on top, and bake for 30-35 minutes until cooked through.
- Remove from oven, let rest, garnish with green onions, and serve warm.
