  • 1 cup smooth peanut butter
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Combine peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, and red pepper flakes in a bowl to create the marinade.
  2. Add chicken thighs to the marinade, coat well, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. Transfer marinated chicken to a baking dish, pour remaining marinade on top, and bake for 30-35 minutes until cooked through.
  5. Remove from oven, let rest, garnish with green onions, and serve warm.
