  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 cup red wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 pound pasta (tagliatelle or your choice)
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a skillet and sauté onion, carrots, and celery until soft (5-7 minutes).
  2. Add ground meat, breaking it apart, and cook until browned (about 10 minutes).
  3. Stir in garlic and tomato paste, cooking for an additional 2 minutes.
  4. If using, pour in red wine and let simmer for 5 minutes.
  5. Add crushed tomatoes, oregano, basil, salt, and pepper, and bring to a gentle simmer.
  6. Lower heat and let sauce simmer for at least 30 minutes, stirring occasionally.
  7. Cook pasta according to package instructions, then drain.
  8. Combine pasta with Bolognese sauce, toss well, and serve hot with Parmesan cheese.
