- 1 pound ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans, drained and rinsed
- 2 cups chicken or vegetable broth
- 8 ounces spaghetti
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat, add ground meat, and cook until browned. Add onion and garlic, sautéing until the onion is translucent.
- Add taco seasoning and stir to combine.
- Mix in diced tomatoes and black beans.
- Pour in broth and bring to a boil. Add spaghetti and stir occasionally.
- Reduce heat to a simmer, cover, and cook for 10-12 minutes until spaghetti is tender, stirring occasionally.
- Remove from heat, stir in cheese until melted.
Notes
- Garnish with fresh cilantro before serving.
- Feel free to adjust the seasoning to your taste.
