Ingredients

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans, drained and rinsed
  • 2 cups chicken or vegetable broth
  • 8 ounces spaghetti
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat, add ground meat, and cook until browned. Add onion and garlic, sautéing until the onion is translucent.
  2. Add taco seasoning and stir to combine.
  3. Mix in diced tomatoes and black beans.
  4. Pour in broth and bring to a boil. Add spaghetti and stir occasionally.
  5. Reduce heat to a simmer, cover, and cook for 10-12 minutes until spaghetti is tender, stirring occasionally.
  6. Remove from heat, stir in cheese until melted.

Notes
