- 2 cups of jasmine rice
- 1 lb of boneless chicken thighs, cut into bite-sized pieces
- 2 tablespoons shawarma spice mix
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 bell pepper, diced
- 1 can of diced tomatoes (14 oz)
- 4 cups chicken broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish

Instructions
- Heat olive oil in a large pot over medium heat, add onion and sauté until translucent, then add garlic and cook for another minute.
- Add chicken pieces and shawarma spice mix; cook until chicken is browned on all sides.
- Add bell pepper, canned tomatoes, rice, and chicken broth; mix well and ensure rice is submerged.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Remove from heat, let sit for a few minutes, fluff rice with a fork, garnish with parsley, and serve.
