- 1 pound of breakfast sausage
- 6 large eggs
- 1 cup shredded cheese (cheddar or your favorite)
- 2 cups diced potatoes (frozen hash browns work great!)
- 1 cup chopped bell peppers
- 1 cup chopped onions
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika (optional)
Instructions
- Brown the sausage in a skillet until fully cooked, breaking it into small pieces.
- Spray the crock pot with non-stick spray and layer the bottom with diced potatoes.
- Sprinkle the chopped bell peppers and onions over the potatoes.
- Add the cooked sausage on top of the veggies.
- Beat the eggs with salt, pepper, garlic powder, and paprika, then pour over the crock pot contents.
- Sprinkle shredded cheese on top.
- Cover and cook on low for 8 hours or high for 4 hours.
