Ingredients

  • 1 pound of breakfast sausage
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your favorite)
  • 2 cups diced potatoes (frozen hash browns work great!)
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional)

Instructions

  1. Brown the sausage in a skillet until fully cooked, breaking it into small pieces.
  2. Spray the crock pot with non-stick spray and layer the bottom with diced potatoes.
  3. Sprinkle the chopped bell peppers and onions over the potatoes.
  4. Add the cooked sausage on top of the veggies.
  5. Beat the eggs with salt, pepper, garlic powder, and paprika, then pour over the crock pot contents.
  6. Sprinkle shredded cheese on top.
  7. Cover and cook on low for 8 hours or high for 4 hours.
