- 1 cup orzo pasta

- 1 bell pepper, sliced

- Salt and pepper to taste
- 1 cup shredded Monterey Jack cheese
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet and sear the chicken until golden brown, then set aside.
- Sauté onion and bell pepper in the same skillet until soft, then add garlic and cook for an additional minute.
- Add orzo, diced tomatoes, chicken broth, and Italian seasoning to the skillet, and return the chicken to the pan.
- Cover and simmer for 15 minutes, stirring occasionally.
- Sprinkle cheese on top and cover until melted.
- Garnish with parsley before serving.
