  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1 bell pepper, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded Monterey Jack cheese
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet and sear the chicken until golden brown, then set aside.
  3. Sauté onion and bell pepper in the same skillet until soft, then add garlic and cook for an additional minute.
  4. Add orzo, diced tomatoes, chicken broth, and Italian seasoning to the skillet, and return the chicken to the pan.
  5. Cover and simmer for 15 minutes, stirring occasionally.
  6. Sprinkle cheese on top and cover until melted.
  7. Garnish with parsley before serving.
