- 1/4 cup mayonnaise

Instructions
- Cook the salmon until fully cooked, then flake it with a fork.
- In a bowl, combine flaked salmon, spinach, feta, breadcrumbs, mayonnaise, egg, lemon juice, garlic, oregano, salt, and pepper.
- Shape the mixture into compact patties, about 2-3 inches wide.
- Heat olive oil in a skillet and cook the cakes for 4-5 minutes on each side until golden brown.
- Transfer to a paper towel-lined plate, then serve warm with your favorite dipping sauce or salad.

- Feel free to substitute canned salmon for fresh if needed.
