  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Cook the salmon until fully cooked, then flake it with a fork.
  2. In a bowl, combine flaked salmon, spinach, feta, breadcrumbs, mayonnaise, egg, lemon juice, garlic, oregano, salt, and pepper.
  3. Shape the mixture into compact patties, about 2-3 inches wide.
  4. Heat olive oil in a skillet and cook the cakes for 4-5 minutes on each side until golden brown.
