  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mashed potatoes (homemade or store-bought)
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Combine ground beef, breadcrumbs, Parmesan, parsley, egg, garlic powder, salt, and pepper in a bowl.
  2. Roll mixture into 1-inch meatballs and place on a baking sheet.
  3. Preheat oven to 400°F (200°C) and bake meatballs for 15-20 minutes until golden brown.
  4. In a baking dish, layer half the mashed potatoes, cooked meatballs, marinara sauce, remaining mashed potatoes, and sprinkle mozzarella on top.
  5. Bake for another 15-20 minutes until cheese is bubbly and golden.
