- 1/4 cup of Dijon mustard

Instructions
- Whisk together maple syrup, Dijon mustard, garlic, olive oil, salt, and pepper to make the marinade.
- Marinate the pork in the mixture for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- Place the pork on a baking sheet and bake for 25-30 minutes until the internal temperature reaches 145°F (63°C).
- Let the pork rest for 5-10 minutes, then slice into medallions.
- Serve with leftover marinade and garnish with rosemary if desired.

- Marinating the pork enhances flavor, but it can be skipped if short on time.
