Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together flour, baking powder, and salt in a bowl.
- Cream softened butter and sugar in a large bowl until fluffy.
- Add eggs one at a time, mixing well after each.
- Stir in Limoncello and vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Fold in the lemon zest.
- Pour batter into a greased pan and bake for 30-35 minutes.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
- Whip mascarpone cheese and heavy cream until soft peaks form.
- Slice the cooled cake in half, frost between layers and on the top and sides.
