  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Zest of 2 lemons

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream softened butter and sugar in a large bowl until fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. Stir in Limoncello and vanilla extract.
  6. Gradually mix in the dry ingredients until just combined.
  7. Fold in the lemon zest.
  8. Pour batter into a greased pan and bake for 30-35 minutes.
  9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
  10. Whip mascarpone cheese and heavy cream until soft peaks form.
  11. Slice the cooled cake in half, frost between layers and on the top and sides.
