- 4 boneless, skinless chicken breasts
- 2 large potatoes, diced
- 1/4 cup olive oil
- Juice of 2 lemons
- Zest of 1 lemon
- 4 cloves of garlic, minced
- 1 tablespoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Marinate chicken in olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper for at least 30 minutes.
- Prepare potatoes by chopping and tossing them in olive oil, salt, and pepper.
- Preheat oven to 400°F (200°C).
- Place marinated chicken on a baking sheet with potatoes and drizzle leftover marinade on top. Bake for 30-35 minutes until chicken is cooked through.
- Let the chicken rest, slice it, and serve with roasted potatoes and fresh parsley garnish.
Notes
- For best flavor, marinate chicken for a couple of hours if possible.
- Potatoes can be peeled or left with skin for texture.
