Ingredients

  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Marinate chicken in olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper for at least 30 minutes.
  2. Prepare potatoes by chopping and tossing them in olive oil, salt, and pepper.
  3. Preheat oven to 400°F (200°C).
  4. Place marinated chicken on a baking sheet with potatoes and drizzle leftover marinade on top. Bake for 30-35 minutes until chicken is cooked through.
  5. Let the chicken rest, slice it, and serve with roasted potatoes and fresh parsley garnish.
