- 8 oz fresh spinach tortellini
- 1 lb medium shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 cup fresh spinach
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil salted water, add tortellini, and cook for 3-4 minutes; drain and set aside.
- Melt 2 tablespoons of butter in a skillet over medium heat, add shrimp, and sauté for 2-3 minutes on each side until pink; season with salt and pepper.
- Add minced garlic to the skillet and sauté for 30 seconds, then add fresh spinach and stir until wilted.
- Combine cooked tortellini with shrimp mixture, add lemon juice and zest, stir, and let remaining butter melt into the dish.
- Serve hot, garnished with fresh parsley.
Notes
- Make sure the shrimp is cooked until pink and opaque.
- Adjust seasoning with salt and pepper to taste.
