Ingredients

  • 1 medium lemon, zested and juiced
  • 1 cup breadcrumbs

  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1/4 cup olive oil, for frying
  • 1 cup plain yogurt
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice (additional)
  • 1 clove garlic, minced (optional)

Instructions

  1. Mash the drained chickpeas in a bowl until chunky yet cohesive.
  2. Add lemon zest, lemon juice, parsley, garlic powder, cumin, salt, and pepper; mix well.
  3. Shape the mixture into 8-10 small patties.
  4. Coat each patty in breadcrumbs.
  5. Fry the patties in heated olive oil for 3-4 minutes per side until golden brown.
  6. Prepare the yogurt sauce by mixing yogurt, tahini, lemon juice, minced garlic, and salt until smooth.
  7. Serve the patties warm with the yogurt sauce on the side.
