Instructions
- Make the lavender simple syrup by combining equal parts of water and sugar with dried lavender, simmering until dissolved, then straining and cooling.
- In a shaker, combine gin, lemon juice, lavender syrup, and egg white (if using). Shake vigorously with ice for about 15 seconds.
- Strain into a chilled glass and garnish with a sprig of lavender.
Notes
- For a frothier cocktail, include the egg white.
- Store any leftover lavender syrup in the fridge for future use.
