Ingredients

  • 1 pound ground beef or chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine meat, breadcrumbs, green onions, garlic, soy sauce, sesame oil, brown sugar, ginger, salt, and pepper in a bowl.
  3. Shape the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
  4. Toss mixed vegetables with olive oil, salt, and pepper; spread around meatballs.
  5. Bake for 25 minutes until meatballs are cooked and vegetables are tender.
  6. Serve hot, drizzled with extra soy sauce if desired.
