Ingredients

  • 2 medium zucchini, sliced thinly
  • 1 pound ground beef (or turkey)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup marinara sauce (sugar-free)
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Slice zucchini thinly, sprinkle with salt, and let sit for 10 minutes.
  2. Cook ground beef in a skillet until browned, seasoning with salt and pepper.
  3. Mix ricotta cheese, egg, Italian seasoning, and salt in a bowl.
  4. Layer marinara sauce, zucchini, meat mixture, and cheese mixture in a baking dish, finishing with mozzarella on top.
  5. Cover with foil and bake at 375°F (190°C) for 20 minutes, then remove foil and bake for another 10 minutes until golden brown.
