Ingredients

  • 1 pound cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced (red or yellow)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella balls
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Boil salted water and cook the tortellini according to package instructions (7-10 minutes).
  2. Drain and rinse the tortellini under cold water, then let cool.
  3. Chop the cherry tomatoes, cucumber, bell pepper, red onion, and olives.
  4. Whisk together olive oil, balsamic vinegar, salt, and pepper in a small bowl.
  5. In a large bowl, combine cooled tortellini, chopped vegetables, mozzarella balls, and basil, then toss with the dressing.
  6. Chill for at least 30 minutes before serving.
