- 1 pound cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced (red or yellow)
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella balls
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Boil salted water and cook the tortellini according to package instructions (7-10 minutes).
- Drain and rinse the tortellini under cold water, then let cool.
- Chop the cherry tomatoes, cucumber, bell pepper, red onion, and olives.
- Whisk together olive oil, balsamic vinegar, salt, and pepper in a small bowl.
- In a large bowl, combine cooled tortellini, chopped vegetables, mozzarella balls, and basil, then toss with the dressing.
- Chill for at least 30 minutes before serving.
