Instructions
- Heat olive oil in a skillet over medium heat.
- Add ground beef, break apart, and cook until browned (5-7 minutes).
- Toss in onions and garlic, sauté for 2-3 minutes until onions are translucent.
- Add sweet potatoes, stir, and cook for about 10 minutes until softened.
- Incorporate zucchini, paprika, cumin, salt, and pepper, stir, and cook for another 5 minutes.
- Serve hot, garnished with parsley if desired.
