- 1 pound ground beef
- 1 cup cooked rice (white or brown)
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado, diced
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat a skillet over medium heat and cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
- Sprinkle taco seasoning over the beef, mix well, and add a splash of water if needed. Cook for 2-3 minutes.
- In a bowl, layer cooked rice, seasoned beef, black beans, corn, diced tomatoes, and top with shredded cheese.
- Garnish with diced avocado and cilantro before serving.
