- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, whisk together sugar, oil, and eggs. Add vanilla and mix.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Fold in the grated carrots, crushed pineapple, walnuts, and raisins.
- Divide the batter between the pans and bake for 45-50 minutes.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frost with cream cheese frosting, slice, and serve.
Notes
- Make sure to not overmix the batter for a lighter cake.
- Optional add-ins can be adjusted according to preference.
