Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  4. In another bowl, whisk together sugar, oil, and eggs. Add vanilla and mix.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in the grated carrots, crushed pineapple, walnuts, and raisins.
  7. Divide the batter between the pans and bake for 45-50 minutes.
  8. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. Frost with cream cheese frosting, slice, and serve.

Notes

  • Make sure to not overmix the batter for a lighter cake.
  • Optional add-ins can be adjusted according to preference.
