- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 packet fajita seasoning
- 1 can black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup cooked rice (optional)
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet, add chicken, and cook until golden brown (5-7 minutes).
- Add sliced onion and bell peppers; sauté for 5 minutes until tender.
- Sprinkle fajita seasoning, then stir in black beans, corn, and salsa.
- In a greased baking dish, layer half of the chicken mixture, add rice if using, then top with remaining mixture.
- Sprinkle shredded cheese on top.
- Bake at 350°F (175°C) for 25-30 minutes until cheese is bubbly and golden.
