Instructions
- Peel and quarter the russet potatoes.
- Boil the potatoes in salted water for 15-20 minutes until fork-tender.
- Drain and mash the potatoes with butter, heavy cream, egg yolks, salt, pepper, and nutmeg.
- Pipe the mashed potatoes into mounds on a parchment-lined baking sheet.
- Bake at 400°F (200°C) for 20-25 minutes until golden brown.
