- 2 pounds of steak (chuck or sirloin works best)
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cups of beef broth
- 1 cup of sour cream
- 1 cup of shredded cheddar cheese
- 1 cup of cooked bacon, crumbled
- 2 teaspoons of garlic powder
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- Cut the steak into bite-sized pieces and season with salt, pepper, and garlic powder.
- Layer diced potatoes, chopped onion, and seasoned steak in the crockpot, then pour beef broth over.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Stir in sour cream and half of the shredded cheese after cooking.
- Serve in bowls topped with remaining cheese, crumbled bacon, and garnished with fresh chives.
