Ingredients

  • 1 pound of firm white fish (like cod or haddock)
  • 1 cup of all-purpose flour
  • 2 large eggs
  • 1 cup of breadcrumbs (Panko works best)
  • Salt and pepper to taste
  • Vegetable oil for frying
  • For the Sriracha mayo:
  • 1/2 cup of mayonnaise
  • 2 tablespoons of Sriracha sauce
  • 1 tablespoon of lime juice

Instructions

  1. Cut the fish into stick-shaped pieces, about 1 inch wide and 4 inches long.
  2. Set up a breading station with flour, whisked eggs, and breadcrumbs in separate bowls.
  3. Season the flour with salt and pepper.
  4. Coat each piece of fish in flour, dip in egg, then coat with breadcrumbs.
  5. Heat 1/2 inch of vegetable oil in a skillet over medium heat.
  6. Fry the fish sticks for 3-4 minutes on each side until golden brown and crispy.
  7. Drain fried fish sticks on a paper towel-lined plate.
  8. Mix mayonnaise, Sriracha, and lime juice in a small bowl to make the Sriracha mayo.
  9. Serve the fish sticks hot with the Sriracha mayo on the side.
