- 2 pounds of Yukon Gold potatoes
- 1/4 cup of balsamic vinegar
- 1 tablespoon of fresh thyme leaves
- 3 tablespoons of olive oil
- Salt and pepper to taste
- 1 cup of shredded cheese (optional)
- Fresh thyme sprigs for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the potatoes, then slice them thinly (about 1/8 inch thick).
- In a bowl, mix potato slices with balsamic vinegar, olive oil, thyme, salt, and pepper.
- Grease a round baking dish and layer the potato slices in a circular pattern.
- Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15 minutes until golden.
- Cool for a few minutes, then garnish with fresh thyme and serve.
Notes
- For extra flavor, consider adding cheese between the layers.
- Thinner slices result in a crispier texture.
