Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- Cook the chopped bacon in a skillet over medium heat until crispy, then drain on paper towels.
- In a large bowl, mix halved potatoes with olive oil, honey, garlic powder, salt, and pepper.
- Fold in the crispy bacon.
- Spread the potato mixture on a baking sheet and roast for about 30 minutes, stirring halfway through.
- Garnish with fresh parsley and serve immediately.
