- 1 can of butter beans (15 oz)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, fresh
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a skillet and sauté minced garlic for 1 minute.
- Add halved cherry tomatoes and cook for 3-4 minutes until softened.
- Incorporate butter beans and mix gently.
- Add fresh spinach and heavy cream, stirring until spinach wilts.
- Mix in grated Parmesan cheese and season with salt and pepper.
- Serve in a bowl, garnished with fresh basil.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Can be served with crusty bread for dipping.
