Ingredients

  • 1 boneless turkey breast (about 34 pounds)
  • 1 cup cranberry juice
  • 1 cup fresh cranberries
  • 1 orange (zested and juiced)
  • 1/2 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs (like rosemary or thyme) for garnish

Instructions

  1. In a saucepan, combine cranberry juice, fresh cranberries, orange juice, orange zest, brown sugar, soy sauce, garlic powder, and onion powder; boil and simmer for 10 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. Pat the turkey breast dry and season with salt and pepper.
  4. Place the turkey in a roasting pan and pour half of the glaze over it.
  5. Roast for about 1 hour, basting with remaining glaze every 20 minutes.
  6. Check that the internal temperature reaches 165°F (74°C) and remove from the oven.
  7. Let the turkey rest for 15 minutes before slicing and serve with remaining glaze.
