- 4 fillets of white fish (like tilapia or cod)
- 1 cup of coconut milk
- 1 ripe mango, diced
- 2 tablespoons of lime juice
- 2 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1 tablespoon of honey or agave syrup
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse and dry the fish fillets.
- Mix coconut milk, lime juice, garlic, ginger, and honey to create the marinade.
- Marinate the fish fillets for at least 15 minutes.
- Heat oil in a skillet over medium heat and cook the marinated fish for 4-5 minutes on each side.
- Add diced mango in the last minute of cooking.
- Serve the fish with any remaining sauce and garnish with cilantro.
Notes
- For best flavor, marinate the fish longer if possible.
- Adjust the seasoning with salt and pepper as desired.
