Ingredients

  • 4 fillets of white fish (like tilapia or cod)
  • 1 cup of coconut milk
  • 1 ripe mango, diced
  • 2 tablespoons of lime juice
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 1 tablespoon of honey or agave syrup
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse and dry the fish fillets.
  2. Mix coconut milk, lime juice, garlic, ginger, and honey to create the marinade.
  3. Marinate the fish fillets for at least 15 minutes.
  4. Heat oil in a skillet over medium heat and cook the marinated fish for 4-5 minutes on each side.
  5. Add diced mango in the last minute of cooking.
  6. Serve the fish with any remaining sauce and garnish with cilantro.
