Ingredients

- 2 cups of grilled chicken, chopped
- 1 cup of chipotle ranch dressing
- 1 cup of cooked rice (white or brown)
- 1 cup of black beans, drained and rinsed
- 1 cup of corn (fresh or frozen)
- 1 cup of shredded cheese (cheddar or Mexican blend)
- 1 cup of diced tomatoes
- 1/2 cup of chopped cilantro
- 4 large flour tortillas
- Salt and pepper to taste
Instructions
- Marinate and grill the chicken until cooked through, about 6-8 minutes per side.
- Mix chipotle ranch dressing in a bowl, adjusting spice to taste.
- Assemble the burrito with rice, beans, corn, chicken, tomatoes, cheese, and sauce on a tortilla.
- Roll the burrito by folding in the sides and rolling from the bottom up.
- Optional: Grill the assembled burrito on a skillet for 2-3 minutes on each side for a crispy exterior.
