- 2 pounds of baby potatoes
- 1 pound of smoked sausage, sliced
- 1 cup of shredded cheddar cheese
- 1 packet of ranch dressing mix
- 1/4 cup of olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes; place in a large mixing bowl.
- Add the sliced smoked sausage to the bowl.
- Pour olive oil and sprinkle ranch dressing mix over the mixture; toss to coat.
- Spread the mixture on a baking sheet and bake for about 30 minutes, stirring halfway.
- In the last 5 minutes, sprinkle shredded cheddar cheese on top.
- Remove from the oven, garnish with parsley if desired, and serve.
Notes
- For a spicier kick, consider using spicy smoked sausage.
- Leftovers can be stored in an airtight container in the fridge.
