- 4 medium potatoes, diced
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1 small onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Peel and dice the potatoes, rinse under cold water, and pat dry.
- Heat olive oil in a skillet over medium heat and cook the potatoes for 10–12 minutes until golden brown and tender, seasoning with salt and pepper.
- Add the chopped onion and cook for another 2–3 minutes until translucent.
- Whisk the eggs in a bowl, pour over the potatoes and onions, and cook until just set, about 2–3 minutes.
- Sprinkle shredded cheddar cheese on top, cover to melt, and serve.
