- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup shredded Parmesan cheese
- 4 large flour tortillas
- 1 cup lettuce, shredded
- ½ cup diced tomatoes
- ¼ cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse and pat dry the shrimp.
- Toss shrimp with Cajun seasoning until well coated.
- Heat olive oil in a skillet, then cook the shrimp for 2-3 minutes on each side until pink and opaque.
- Lay out a tortilla, spread mayonnaise, add lemon juice, lettuce, diced tomatoes, and cooked shrimp, then sprinkle with Parmesan.
- Roll the tortilla, tuck in the sides, slice in half, and serve.
Notes
- Feel free to adjust the seasoning to your taste.
- These wraps can be served with a side of dipping sauce if desired.
