Instructions
- Cream butter and brown sugar until light and fluffy, then incorporate egg and vanilla.
- In a separate bowl, whisk together flour, baking powder, and salt; gradually add to wet ingredients.
- Wrap dough in plastic and chill for 30 minutes.
- Preheat oven to 350°F (175°C); roll out dough to 1/4 inch thick and cut into rectangles.
- Spread fruit preserves on half of the rectangles, cover with another rectangle, and seal edges.
- Bake for 10-12 minutes until edges are golden brown.
- Mix powdered sugar with milk for icing and drizzle over cooled cookies.
