- 4 boneless, skinless chicken breasts
- 1 cup of fresh pineapple chunks (or canned, if you prefer)
- 1/2 cup of brown sugar
- 1/4 cup of soy sauce
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1 teaspoon of ground ginger
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- Combine soy sauce, brown sugar, olive oil, garlic, and ginger in a bowl to create a marinade. Add chicken and coat well; marinate for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- Prepare pineapple by chopping fresh or draining canned pineapple.
- Place marinated chicken in a baking dish, pour remaining marinade over it, and top with pineapple. Bake for 20-25 minutes until chicken reaches 165°F (75°C).
- Let chicken rest, slice, drizzle with sauce, and garnish with green onions before serving.
Notes
- For best flavor, marinate the chicken longer if possible.
- This dish pairs well with rice or a fresh salad.
