Delicious blueberry cheesecake cookies with a soft texture and creamy filling.

Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup blueberries (fresh or frozen)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Cream butter and sugars until fluffy, then mix in eggs and vanilla.
  2. In another bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients, mixing until just combined.
  3. Mix cream cheese, powdered sugar, and lemon juice until smooth, then fold in blueberries.
  4. Form cookie dough balls on a baking sheet, make indentations, fill with blueberry cheesecake mixture, and optionally cover with dough.
  5. Bake for 12-15 minutes until edges are golden, then cool on a wire rack.

Notes

  • For best results, do not overmix the dough.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
