- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup blueberries (fresh or frozen)
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Cream butter and sugars until fluffy, then mix in eggs and vanilla.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients, mixing until just combined.
- Mix cream cheese, powdered sugar, and lemon juice until smooth, then fold in blueberries.
- Form cookie dough balls on a baking sheet, make indentations, fill with blueberry cheesecake mixture, and optionally cover with dough.
- Bake for 12-15 minutes until edges are golden, then cool on a wire rack.
Notes
- For best results, do not overmix the dough.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
