Delicious baked quesadillas filled with sautéed spinach and mushrooms, topped with cheese.

Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella works great)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Sour cream or salsa for serving (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat, add mushrooms and cook for 5 minutes.
  2. Add spinach and cook for an additional 3 minutes. Stir in garlic powder, onion powder, salt, and pepper, then remove from heat.
  3. Spread the vegetable mixture on half of each tortilla, sprinkle cheese, and fold them in half.
  4. Preheat oven to 375°F (190°C), place quesadillas on a lined baking sheet, and bake for 15 minutes until golden brown.
  5. Allow to cool, then cut into wedges and serve.

Notes

  • Feel free to customize the filling with other vegetables or proteins.
  • Serve with sour cream or salsa for extra flavor.
