- 4 large flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar or mozzarella works great)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Sour cream or salsa for serving (optional)
Instructions
- Heat olive oil in a skillet over medium heat, add mushrooms and cook for 5 minutes.
- Add spinach and cook for an additional 3 minutes. Stir in garlic powder, onion powder, salt, and pepper, then remove from heat.
- Spread the vegetable mixture on half of each tortilla, sprinkle cheese, and fold them in half.
- Preheat oven to 375°F (190°C), place quesadillas on a lined baking sheet, and bake for 15 minutes until golden brown.
- Allow to cool, then cut into wedges and serve.
Notes
- Feel free to customize the filling with other vegetables or proteins.
- Serve with sour cream or salsa for extra flavor.
