- 6 slices of bacon, chopped
- 1 medium onion, diced
- 3 medium potatoes, peeled and cubed
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Cook chopped bacon in a pot over medium heat until crispy, then remove and drain on paper towels.
- Sauté diced onion in the bacon fat until soft and translucent.
- Add cubed potatoes and chicken broth, bring to a boil, then simmer until potatoes are tender.
- Blend the soup to your desired consistency using an immersion blender.
- Stir in shredded cheddar cheese and heavy cream over low heat until melted and creamy; season with salt and pepper.
- Serve the soup in bowls, garnished with crispy bacon and chopped chives.
